Mont Blanc Dessert

Last october on my medical elective in Saitama/Japan I ate a lot of Montblanc Desserts. It is a favourite and well known dessert in Japan. Here is my recipe of the Montblanc Dessert. Hope it gives you the same smile on your face that it gives to me when enjoyed it.


300 g chestnut puree
150 ml cream
80 g sugar

4 little sponge cakes

4 teespoon crushed walnuts
icing sugar

Sweeten the chestnut puree with the half of the sugar. Whisk the cream until stiff and mix the other half of the sugar into it. Top the little sponge cakes with a bit cream. Pour chestnut puree in a piping bag with a fine nozzle and top the cakes with it. It looks a bit like spaghetti. Decorate the chestnut puree with nuts and icing sugar.
